If they asked me as a foreigner what three foods define Peru, I would have it clear: Ceviche, Causa and Lomo Saltado, but with that statement I would be sinning to have a vision that is too Lima.
The lomo saltado is an apparently very simple dish that fuses Chinese and Peruvian cuisine, consisting of beef, onion, green chili, vinegar, parsley, French fries and a splash of soy sauce (soy sauce) and another of pisco.
Depending on the quality of beef used, the end result can be spectacular and there are several restaurants that specialize in this flagship dish. But this is another story and we will find out later on our blog.
